It is a delicious, nutritious and healthy dish that rich in fiber, vitamins, and minerals. It can be served as a main or a side dish.

Mujadarra is appropriate for individuals with a heart condition. In addition, it is a healthy dish for children, pregnant and lactating women and seniors. Diabetes patients can consume it considering that 1 cup = 1 serving carbohydrate.

It is not recommended to be served for babies below one year of age or people with chewing or swallowing difficulties.

Ingredients

  • 1 1/2 cups rice uncooked
  • 1 cup lentils dried
  • 1 pc onion chopped
  • 2 tbsp parsley chopped
  • 2 tbsp canola oil
  • 4 cups water

Instructions

  1. In a sauce pan, sauté the onion in canola oil until browned.

  2. Add the rice and mix well.

  3. Boil the lentils separately until tender.

  4. Add the cooked lentils and water to the rice. Cook until the rice become tender. Garnish it with sautéed onions and chopped parsley.

  5. Serve with salad and low-fat or nonfat yogurt or laban to make it more balanced and nutritious.
